I was inspired by discussions between people of African diasporas living in the United States to create a cheeky alignment chart of how the standard dish of "greens" might be interpreted. Happy eating, however you prepare your collards, kales, or otherwise.

My own greens depend on what's in supply and time constraints, but one of my favorites to make is the decidedly structure- and ingredient-neutral combination of sauteed kale and beet tops. Sometimes I chargrill the kale before I add it to the beet tops. Then I season to taste (secret ingredient: Asian fish sauce) and top with a little olive oil. I never have leftovers.
Why no, I am not a person of African diasporas, why do you ask?
